We are on week 3 of social distancing. An official stay at home order in our state is now in effect. Plenty of time at home equals plenty of time actually making all those recipes I have always wanted to try.
I am a lover of quick and easy recipes and the recipe I want to share with you today is exactly that!
If you like Matcha then this is for you. My recipe is a result of me going through a ton of Pinterest recipes for energy balls and modifying it to fit my taste buds.
Matcha is high in antioxidants and is a great source of energy without the jitters.
Ingredients
-1 tbsp matcha tea powder (my fav is this one from Hustle)
-1 tbsp coconut oil
-2 tbsp honey (you can sub maple syrup if you want)
-4 tbsp almost flour
-1 cup shredded coconut (my fav is this one from Terrasoul)
Combine all the ingredients in a food processor and form into small balls. I made about 7-8 from these.
These should be good in the refrigerator for about a week.
